Biscuit plants feel safe — dry product, hot ovens, long shelf life. Then an audit finds no acrylamide strategy, wet cleaning where dry discipline was required, or an uncontrolled chocolate enrobing room, and a routine inspection becomes a corrective-action marathon. Why Biscuit Plants Need Their Own Rules

The oven creates its own contaminant — acrylamide — and the five manufacturing areas (washing, kneading, forming, baking, filling and covering) each carry different risks. Cream fillings and chocolate units reintroduce moisture and allergens into a dry plant, and every wash-down in the wrong place feeds mould and Salmonella.
