Pickling takes low-acid vegetables — the raw material of botulism — and makes them safe with acid. The entire safety case rests on one number: pH 4.6, reached and verified in every batch. Workshops that ferment by feel, without measurement or records, are betting the business on habit.
Why Acidification Must Be Proven, Not Assumed
Fermentation is a living process that can stall or spoil; acidification has a critical limit that must be validated, monitored and recorded. Around it sit vessel hygiene — including the traditional tiled basin — brine effluent handling, sulphite allergen rules, optional post-pack pasteurisation and positive release before anything reaches the market.
What the AGS Pickles Guideline Covers
Fifty chapters and six annexes aligned with Codex CXS 260-2007 and CXC 23-1979 and ISO 22000:
- The four kinds of pickling vessel, including the tiled basin
- Fermentation — parameters, hygiene and spoilage
- Acidification, the pH 4.6 critical limit and its validation
- Packing, post-pack pasteurisation and packing materials
- The card of statement (labelling) and positive release
- Drainage and spent brine, plus an establishment inspection checklist
Annex B describes the four kinds of pickling vessel and the acidification control in table form, alongside the five sections and facility ratios. Annex C provides the establishment inspection checklist, Annex D the multi-stage vessel cleaning method, and Annexes E and F the Codex/ISO 22000 conformance map and the jurisdictional adaptation register for local values.
Who It Helps
Pickle and fermented vegetable producers from workshop to factory scale, QA staff, and inspectors approving acidified food operations. Traditional producers can keep their methods — and finally prove they are safe.
