Overview

Seafood hazards shift with what came off the boat, and this system applies the Codex Alimentarius seven HACCP principles on a GMP and GHP foundation with that in mind. The hazard analysis is scored for histamine (scombrotoxin) in susceptible fish, Anisakis parasites in raw and lightly processed product, Vibrio spp. and Listeria monocytogenes, marine biotoxins, heavy metals, fish-allergen cross-contact, and physical hazards from bones, shell and metal fragments.

Out of that analysis the Seafood HACCP Plan and Study sets three critical control points and a receiving OPRP. CCP-1 is chilled storage at 4°C or below, holding histamine formation in check. CCP-2 is freezing for parasite destruction, taking product core to minus 20°C or colder for at least 24 hours, run by its own procedure and captured on a freezing and parasite destruction record. CCP-3 is metal detection, logged on a detector check record and reinforced by a glass and brittle materials register, while OPRP-1 covers receiving controls for histamine and heavy metals. Framework documents for methodology, prerequisites, verification and traceability carry the trail from supplier approval to mock recall, and each limit needs confirming against your own species and process.
