Overview

A specialised scheme package for certifying HACCP-based food safety systems against Codex Alimentarius requirements — the CAC/RCP 1 General Principles of Food Hygiene and its HACCP annex — operated under ISO/IEC 17021-1:2015. The clients are manufacturers, caterers and food businesses whose customers demand a HACCP certificate, and the audit differs in kind from management-system auditing: the auditor must test a hazard analysis, challenge how critical control points and limits were chosen, and find validation and verification evidence in a working operation.

That is where the package concentrates: the audit tools carry the technical load — a prerequisite programme and good hygiene practice checklist, a HACCP principles and application checklist, a HACCP documentation review checklist and a Stage 1 readiness checklist. Behind them sits the body's own apparatus, from quality manual and HACCP scheme definition to procedures for application review and contract, audit planning and execution, certification decision, surveillance and recertification, changes, suspension and withdrawal, control of certificates, marks and logos, appeals, complaints, internal audit and management review, with applicant and auditor guidance and food safety auditor training material.

What this system covers

  • Prerequisite programmes and good hygiene practice — the GHP foundation Codex expects beneath any HACCP plan
  • Hazard analysis and CCP determination — how hazards were identified and control points and limits justified
  • Validation and verification — evidence that the plan works and is checked on site, not only on paper
  • HACCP documentation review — plan, studies and records assessed before the site audit
  • Audit time and planning reflecting food-sector risk, from application review to Stage 2
  • Certification control — decision records, certificates, and use of marks and logos by clients
  • Food safety auditor competence — qualification, approval, evaluation and combined HACCP and 17021-1 training

Who it's for

Certification and inspection organisations already serving the food industry that want a defensible HACCP scheme to sell alongside, or instead of, ISO 22000 — often prompted by a retailer or regulator asking clients for Codex-based certification. The owner gains one consistent basis for every HACCP audit their auditors run, and a documented programme to present at accreditation assessment.
