Overview
Manufacturing HACCP packages assume a kill step. Warehouses, cold stores and distribution fleets have none, and this system is written accordingly. It applies Codex Alimentarius HACCP across goods receipt, ambient, chilled and frozen storage, picking, loading and transport, so hazard analysis turns on temperature abuse and pathogen growth, not process lethality. Two critical control points anchor the plan: CCP-1, chilled and frozen storage under continuous temperature monitoring with alarms, and CCP-2, cold chain integrity in transit, with OPRP-1 covering receiving temperature checks at goods inwards.
A dedicated storage and distribution HACCP plan sits with the quality manual, and the procedures follow the pallet: goods receiving, storage across the three temperature regimes, cold chain control, picking, loading, dispatch and transport. Chiller and freezer records, vehicle pre-loading inspections and in-transit temperature logs form the evidence trail. It also carries a food defence and site security procedure, a control area generic templates omit and distribution auditors ask about. Supplied critical limits are provisional; confirm them against your own equipment and validation data.
What this system covers
- Goods receipt (OPRP-1), covering load checks, receiving temperature verification and rejection of out-of-specification deliveries
- Ambient, chilled and frozen storage, covering segregation, stock condition and dry storage inspection
- Temperature control and cold chain (CCP-1), covering continuous monitoring, alarm response and deviation handling
- Picking, loading and dispatch, covering vehicle pre-loading inspection, load integrity and dispatch records
- Transport and distribution (CCP-2), covering in-transit temperature recording to the delivery point
- Food defence and site security, a distribution control area most generic HACCP sets leave out
- Traceability and recall readiness, covering lot tracking across inbound, stored and outbound movements
- Prerequisite programmes for cleaning and sanitation, pest control, personal hygiene and allergen management
Who it's for
Cold storage warehouses, third-party logistics providers and food distribution or transport companies that hold and move food without manufacturing it. The trigger is usually a customer or certification-body audit, or a contract requiring documented cold chain control from goods inwards to delivery. You finish with a system framed around the assets you actually run, ready for your own temperatures and tolerances.
