Three critical control points, six operational prerequisite programmes and a refinery mapped from raw sugar intake to packing.
Overview
Built on Codex Alimentarius CXC 1-1969, the HACCP Sugar Refining Management System is the most extensive package in the range and models a full nineteen-step refining process. Its control points are set where refining genuinely fails. CCP-1 governs drying and cooling, holding moisture at or below 0.04% m/m and product temperature at or below 35°C at the cooler outlet. CCP-2 governs screen integrity at grading and sieving. CCP-3 governs magnetic separation and in-line metal detection before packing. Each has its own monitoring record, verification check and corrective action route.
Six operational prerequisite programmes sit beneath the plan, covering process-aid dosing, sulphitation and residual sulphur dioxide limits, filtration, decolourisation and resin regeneration, and conditioning-silo hygiene. The detail is refinery-specific rather than food-safety boilerplate: silo management, dryer and cooler monitoring, magnet gauss ratings and resin rinse-out endpoints. The manual set frames it, from hazard analysis methodology to verification, traceability and continual improvement, around the sugar refining HACCP plan and study. The moisture, temperature and detection limits quoted here are provisional and need validating against your own dryer, cooler and detector performance.
What this system covers
- Drying and cooling (CCP-1) — moisture and cooler outlet temperature against stated limits
- Screen integrity at grading and sieving (CCP-2) — inspection, breakage response and product disposition
- Magnetic separation and in-line metal detection (CCP-3) — magnet gauss ratings and detector checks before packing
- Process aids and refining chemistry — dosing, filter media and resin usage, sulphitation limits and resin rinse-out endpoints
- Storage and silo management — intake screening, conditioning-silo hygiene and finished goods warehousing
- Foreign body control — the glass and brittle material register, equipment and facility condition
- Verification and competency — internal HACCP audit, pre-audit readiness and sector-specific refining risk training
Who it's for
Cane and beet sugar refineries and bulk sugar packing operations preparing for a customer or certification-body HACCP audit. It suits the quality or technical manager who needs a plan naming the refinery's own control points and process aids, and who would rather adapt a drafted plan than write nineteen process steps from nothing.
