Overview

This food safety management system (FSMS) applies Hazard Analysis and Critical Control Point methodology as set out in the Codex Alimentarius General Principles of Food Hygiene, including the 2020 revision that integrates prerequisite programmes with HACCP and remains the current reference. Codex HACCP is the internationally accepted baseline for food hygiene, and any organisation in the food chain can apply it, from primary production and manufacturing to catering, storage and distribution, whatever its size or product type. Good hygiene practice comes first; the HACCP plan is built on it.

The study runs through the preliminary steps and the seven principles: hazard analysis, CCP determination, validated critical limits, monitoring, corrective action, verification, and documentation and records. Weight falls on management commitment, a competent HACCP team, accurate product and process description, and control proportionate to risk, with CCPs distinguished from other control measures. Codex underpins the higher-level schemes BRCGS, FSSC 22000, IFS and ISO 22000, but it is a methodology rather than a formally accredited certification scheme, verified by internal audit and, where required, second or third-party assessment.
