Overview

Slaughter is performed by competent Muslim slaughtermen with the prescribed invocation, and line speed becomes a control point in its own right: it must allow every bird to be properly slaughtered, with complete neck cuts and bleed-out verified and birds dead on arrival rejected. Where water-bath stunning is used, parameters are set and tested so that stunning stays non-lethal, with reversibility and recovery testing recorded under GSO 993 and supported by validation and mechanical slaughter guidance. Past the kill line the concern turns to identity, as carcass marking and segregation through chilling, cut-up and packing prevent mixing with non-Halal product. Hourly monitoring, the slaughterman register and internal audit give the Halal committee evidence to approve inputs, correct deviations and sustain the system.
