Overview
Food-service contractors answer to two masters: the public-health regulator at each location, and a client who has written food safety into the contract. This HACCP-based system is built for that position — corporate canteens, remote facilities, healthcare and institutional foodservice, run on someone else's premises to someone else's specification. Its organising problem is consistency: the same hazard controls, records and evidence at every site.
It follows the Codex Alimentarius seven principles and twelve steps — prerequisite programmes, hazard analysis, CCP identification, critical limits, monitoring, corrective action, verification and record-keeping — with a standalone HACCP plan and study behind them.
