Overview
Institutional foodservice in universities, schools and hospitals feeds large populations, many of them vulnerable, under stringent regulatory, accreditation and client scrutiny. Grounded in the Codex Alimentarius seven principles and twelve steps, this HACCP-based system is built for that duty of care: an Institutional Food Safety Manual sets policy and appoints the HACCP team, and an Institutional HACCP Plan and Study documents the hazard analysis across production kitchens, dining halls and ward service.
The full HACCP apparatus is here — prerequisite programmes, hazard analysis, CCP identification, critical limits, monitoring, corrective action, verification and record-keeping — with sector-specific controls for mass catering, therapeutic and modified-texture diets, allergen and dietary-requirement management, ward and canteen service, and the safeguarding of vulnerable diners. Checklists convert HACCP into daily routines for kitchens and service points, training evidences hygiene competence across a large workforce, and every document is editable to your institution, menus and dietary programmes.
What this system covers
- Mass catering production — batch cooking, cooling and reheating limits, monitoring and deviation handling for dining halls and central kitchens
- Therapeutic and modified-texture diets — specification, preparation and verified delivery of the correct meal to the named diner
- Allergen and dietary-requirement management — declaration, cross-contact control and a documented check before a special diet is served
- Ward and canteen service — meal service set-up, transport to the point of service and holding temperature control
- Supplier approval, goods-in and storage — approved supplier list, specification, delivery acceptance and storage temperature logging
- Prerequisite programmes — personal hygiene, fitness to work, cleaning and sanitation, pest control, maintenance and calibration
- Traceability, withdrawal and recall, internal audit and CAPA — the evidence accreditation bodies and inspectors ask to see
Who it's for
Hospital quality and catering directors, university and school catering managers, and the facilities-management providers holding these contracts buy this ahead of an accreditation visit, a client contract review, or one of the frequent inspections the sector attracts. They leave with editable, documented governance that stands up when an auditor asks how a specific patient meal was controlled.
