Overview
On the slaughter line, halal status and animal welfare are decided in seconds by people working at speed. This course covers each step, from lairage and ante-mortem checks through restraint, stunning and the act of slaughter to dressing, post-mortem inspection and records.
The practical assessment is observed on a live line or a validated simulation. The trainee workbook holds templates for a slaughter log, stunning validation record, slaughterman competence assessment, pre-shift checklist and a self-check against a certification body's slaughter checklist, which is not supplied. A slide deck with notes, an exam pack with a practical assessment sheet and keys, and a certificate template complete the package. The certificate records training given by your organisation and the species assessed.
Slaughterer eligibility and stunning positions are set side by side across GSO 993:2015, OIC/SMIIC 1:2019 and the Indonesian SNI 99002:2016 and SNI 99003:2018. The GSO 993 stunning parameters are taught with the values left for you to fill in from the site's own copy of the standard. MS 1500:2019, IHIA references and Codex CAC/RCP 58 are also cited. Standards are referenced by number and title only, and no standard text is included. AGS is independent and is not affiliated with any halal certification body or standards organisation.
