Overview

A food establishment needs someone on site who answers for food safety while it operates. That person has to know the rules, watch the team and keep the records. This course trains owners, managers and supervisors for that role, from the seven duties of the person in charge to records, self-inspection and the inspector.

It is general training for the person in charge. It is not the Dubai Municipality PIC qualification, or any other municipality's PIC certification or registration, and the certificate template says so. The slides explain that Dubai Municipality requires an on-site person in charge holding the municipality's PIC certification, obtained separately through the authority's own training and examination, and that other emirates set their own rules.

Temperature figures follow the Dubai Municipality Food Code (2013): a danger zone of 5 °C to 60 °C, hot holding at 60 °C or above, and two-stage cooling from 60 °C to 20 °C within 2 hours, then to 5 °C within a further 4 hours. AGS is independent and is not affiliated with Dubai Municipality or any other UAE municipality. Regulations are referenced by citation, and no standard text is included.

What this course covers

  • The PIC role: the seven duties of the person in charge.
  • Hazards and illness: microbiology, food poisoning, contamination and allergens.
  • The safe flow of food: from receiving to service, including two-stage cooling.
  • Supervising hygiene: setting and checking staff hygiene.
  • Premises, cleaning and pests: keeping the establishment in a safe state.
  • Records, self-inspection and the inspector: the PIC's daily routine and what happens on an inspection visit.
  • Learning and assessment: a candidate workbook with a PIC quick-reference card and daily-routine exercises, a written exam with an oral question bank and answer key, and a certificate template.
