Overview

This is a Halal Assurance System for poultry processing plants, built on the SMI-001 technical scheme for poultry slaughter. The scheme sits under OIC/SMIIC 1, the Halal food standard of SMIIC — the Standards and Metrology Institute for Islamic Countries, affiliated to the Organisation of Islamic Cooperation — while OIC/SMIIC 2 governs the bodies that certify plants against it. The internal audit checklist is written to OIC/SMIIC 1:2019 and SMI-001.

What separates poultry from red meat is speed and mechanisation. Line speed is controlled so that no bird passes the blade unslaughtered, and is managed with the interval between stunning and the cut; where a mechanical blade is used, the tasmiyah is applied and verified as the scheme requires. The process flow runs around those controls, from lairage and ante-mortem inspection through slaughter, bleeding, scalding, defeathering, evisceration and chilling to cutting, packing, freezing and dispatch.

  • Slaughterman competence and oversight — certification re-assessed against the speed the line runs at, with training records and committee review
