Overview
A supervisor has to do more than know the rules. They have to make the team follow them, check that they work, and act when they do not. This course is written for that role. It covers managing food safety, the science behind it and the systems that control it, and the delegate workbook turns topics into scenarios where the delegate decides what to do.
The slides carry speaker notes, including a two-stage cooling failure chart and a calibration slide. The workbook adds the scenario exercises and a glossary. The exam comes with an oral question bank and an answer key, and a certificate template records supervisory-level training given by your organisation.
The course follows a Level 3 syllabus structure. It is not an accredited qualification or award. The CCP decision tree is based on the NACMCF HACCP principles and the Codex General Principles of Food Hygiene. Temperature figures follow the Dubai Municipality Food Code, the Dubai, Sharjah and Abu Dhabi municipality food codes are named as setting local values, and trainers are told to use their own authority's limits. The due-diligence defence and the allergen list are presented in UK and EU terms. AGS is independent and is not affiliated with any UAE municipality. Standards are referenced by number and title only, and no standard text is included.
