Overview

Volume, automation and water-bath stunning all sit between the slaughterman and the individual bird, and closing that distance is what the system is built to do. It covers the operation end to end: live-bird reception and ante-mortem checks, slaughter, bleeding, scalding, defeathering, evisceration, chilling and dispatch. It applies the Halal Assurance System of the United Arab Emirates national Halal scheme, in which UAE.S standards adopt the GSO 2055 framework under the Emirati standardisation and conformity authorities, keeping UAE requirements aligned with the wider Gulf system while national oversight is preserved.

Slaughter is carried out by competent Muslim slaughtermen with the prescribed invocation. Around them the line is treated as a controlled process in its own right: speed, shackling and the position and completeness of the neck cut are set, monitored and recorded so that every bird is properly slaughtered. Parameters for any permitted water-bath stunning are set and verified to keep the stun non-lethal, bleed-out is confirmed, birds dead on arrival are rejected, and non-Halal carcasses are isolated and disposed of under record. Marking and segregation continue through chilling, cut-up and packing, and sector compliance follows UAE.S 993:2022.
