Many juice producers believe acidity makes their product safe. Acidity stops botulism; it does not stop E. coli O157 or Salmonella, which have survived in juice at pH levels producers assumed were protective. The heat treatment is the only kill step — and if it was never validated, it is only a warm pump.

Why Juice Plants Need Validated Heat

Beyond pasteurisation, juice carries hazards most plants overlook: patulin from mouldy fruit (controlled by sorting, not by processing), Alicyclobacillus that survives heat and spoils shelf-stable product, authenticity and composition rules for designations, and aseptic filling discipline where a single seal failure wastes a production run.
