Overview
A processing plant makes two things at once: its product, and the environment that product is made in. This guideline is the international edition of source regulation PHC-C-6, aligned with the Codex General Principles of Food Hygiene and its HACCP annex and with the Codex code for low-acid and acidified low-acid canned foods (CXC 23-1979).
It applies horizontally across food processing, then adds a complete acidified-foods control programme on top. This is one editable reference document, not a management system: annexes carry the acidified-foods figures, zoning and process tables, an inspection checklist and a sanitiser reference.
