Overview
The building requirements are adapted from UAE.S GSO 168, Requirements for Storage Facilities of Dry and Canned Foodstuffs, and they give a licensing inspector figures to check rather than adjectives to interpret: a minimum ceiling height, clearance distances around stock, 110-lux uniform lighting, cleanable floors, fire-resistant construction and a prohibition on asbestos.
The management side is adapted from a national Good Store Management Practices manual written for strategic food security reserves, and its organising idea is the stack. The stack carries the identity, holds the record, and is what gets inspected, segregated or treated when something is found wrong with it. Zoning, internal layout, sanitation and the recurring management gaps the manual names all describe how stacks are kept apart, kept dry and kept accounted for, which is the problem any operator holding dry and canned stock has to solve, whether the stock belongs to a national reserve or to a customer.
