Prepared on the normative basis of the Codex Code of Hygienic Practice for Milk and Milk Products (CXC 57-2004), the General Principles of Food Hygiene with its HACCP annex and ISO 22000:2018, this guideline addresses establishments that receive, process, pack, store and distribute milk and milk products. Its 34 sections open with approval and the food safety management system, plant design, utilities and hygienic equipment, then follow the milk itself.
Parameters are tabulated rather than described: raw milk acceptance criteria in Table 12.1, finished product microbiological guide criteria in Table 17.1, and six annexes of parameter tables, process flows, an inspection checklist and Codex/ISO conformance mapping.
