A heat exchanger cuts the bacterial load by a factor, never to a number: the milk that goes in decides the milk that comes out.
Overview
The AGS milk and milk products hygiene guideline is one reference document, prepared as the international edition of CAC/RCP 57-2004, the Codex Code of Hygienic Practice for Milk and Milk Products, together with UAE.S GSO 2214:2015, the Gulf dairy hygiene code. It reads the dairy chain as a continuum in which no step stands alone: animal health and raw-milk production hygiene, validated combinations of control measures, and the HACCP application, records and training that hold the sequence together.
What it covers
- Raw milk production hygiene — milking and collection practice, and the definitions of raw milk and pasteurisation the rest of the text depends on
- Animal health — brucellosis and tuberculosis control in the supplying animals
- Validated control measures — the five-log pasteurisation concept, and combinations of controls assessed against the level of public-health protection required
- HACCP and management systems — roles across the chain, documentation, records and training
Who it's for
Dairy farms and collection centres, milk processing plants, dairy quality and HACCP teams, veterinary and food inspectors, and consultants implementing dairy food safety management systems. The purchase usually follows a question an auditor has already put: whether this particular combination of controls reaches the required level of protection. The guideline supplies the clause-level reasoning behind an answer, editable to the plant's own process.
