Overview

Inspecting a kitchen and auditing its food safety system are different skills. An inspection checks what is in front of the inspector on the day. An audit tests whether the documented plan is sound, whether it is followed and whether the records are genuine. This course moves experienced inspectors from the first to the second.

It ends in an assessed document review of the flawed HACCP manual of a fictional Example Central Kitchen, supplied in the delegate workbook with the assessment criteria. A slide deck with notes, an exam pack with a key and planted-findings guide, and a certificate template that records training given by your organisation complete the package.

The legal mandate is taught under Federal Law No. 10 of 2015 on Food Safety and Cabinet Resolution No. 26 of 2017, with the Dubai Municipality Food Code as the Dubai example. The trainer brings the applicable emirate instrument. GSO 21 (hygienic regulations for food plants and their personnel) is the GMP/GHP base, with the Codex General Principles of Food Hygiene, GSO 9 and GSO 150. Regulations are referenced by citation. Standards are referenced by number and title only, and no standard text is included. AGS is independent and is not affiliated with Dubai Municipality or any UAE federal or emirate authority.

What this course covers

  • The legal mandate: where the inspector's authority to audit comes from.
  • Inspect, audit, verify, validate: what each means and when each applies.
  • Auditing prerequisites: GMP and GHP on the ground.
  • Auditing the documented plan: a checklist of eight requirements.
  • CP versus CCP: testing whether control points were classified correctly.
  • Floor audit and product tracing: checking the plan against practice.
  • Records, verification and training: including reading records for signs of fabrication.
  • Findings and follow-up: writing findings, reporting and follow-up.
