Overview
HACCP plans are drawn up by a team, but they succeed or fail on the shop floor. Staff who do not know why a temperature is checked can undo a good plan in one shift. This course gives everyone the shared language: what HACCP is, why prerequisite programmes come first, the hazard groups, and the method behind the plan.
The course is aligned with the Codex General Principles of Food Hygiene (CXC 1-1969), citing the 2020 revision (Codex revised the text again in 2022), and teaches the five preliminary steps and the seven HACCP principles. The decision tree is presented as based on the NACMCF and Codex HACCP principles. A worked example follows a cooking critical control point. Temperature figures and the allergen list follow the Dubai Municipality Food Code. ISO 22000, FSSC 22000 and BRCGS are named as schemes built on HACCP.
It is not a plan-writing course, and it points plan writers to implementation-level training. A certificate template records training given by your organisation. AGS is independent and is not affiliated with Dubai Municipality. Standards are referenced by number and title only, and no standard text is included.
What this course covers
- Foundations: what HACCP is, key definitions, and the prerequisite programmes it is built on.
- Hazards: the hazard groups and how they reach food.
- Preliminary steps and principles: the five preliminary steps and the seven Codex principles.
- Critical control points: the decision tree, critical limits, monitoring and corrective action, shown through a cooking worked example.
- Your role: what staff do day to day, and the ways HACCP fails when they do not.
- Learning and assessment: a trainee workbook with key points and a glossary, a written exam with pass and merit marks, an oral question bank, an answer key and a certificate template.
Who it's for
All staff in food businesses that are adopting or already operating HACCP. It is not meant for the people who write the plan.
It pairs with FSMS CodexHACCP-2023 for the management system staff work within, and with the HACCP Implementation Workshop Training Package for the HACCP team.
