Overview

This is a HACCP management system for non-alcoholic beverage production — juices, soft drinks, syrups, and bottled or canned drinks. It applies Codex Alimentarius HACCP principles to the hazards a beverage line runs: CCP-1 Pasteurisation/UHT, controlled by temperature and hold time; CCP-2 Acidification, held at pH ≤ 4.0; and OPRP-1 Water Treatment, controlled through chlorine dosing and UV disinfection. Each carries its own monitoring record, so deviation and corrective-action evidence exists before an auditor asks for it.

Everything is cross-referenced: each control point runs from its clause in the quality manual through the matching procedure, form, checklist, guide and training module, so nothing sits orphaned. The Beverages HACCP Plan & Study holds the study and the plan; the prerequisite programmes cover supplier approval, syrup batch mixing, CIP cleaning verification and mock recalls. Every document carries a control table with code, revision and approval fields. Pasteurisation temperature, hold time and the pH threshold are drafted starting positions, to be verified on your own lines before the system goes live.

What this system covers

  • Pasteurisation and UHT control (CCP-1) — temperature, hold time and deviation handling.
  • Acidification (CCP-2) — pH ≤ 4.0 as the critical limit, with recorded checks and out-of-limit response.
  • Water treatment (OPRP-1) — chlorine dosing and UV disinfection, verified on treated process water.
  • Syrup and batch preparation — mixing records, filling and capping checks.
  • Supplier and raw material control — approval, goods inwards inspection, storage and stock rotation.
  • Hygiene prerequisites — CIP cleaning and sanitation verification, chemical control, pest control and personal hygiene.
  • Allergen control, traceability and recall — readiness proven by mock recall exercises.
  • Verification and competence — internal HACCP pre-audit checks and training on sector-specific beverage risks.

Who it's for

Written for QA managers at small to mid-sized juice, soft drink and bottled-beverage manufacturers facing a customer audit or a regulatory food-safety inspection with no documented HACCP system and no consultant budget. Edit the limits and process detail to match your own lines, validate on site, and enter the audit with a plan, records and training evidence that hold together as one system.
