Overview

A HACCP management system for roasted and ground coffee and processed tea, including flavoured and decaffeinated lines, structured on Codex Alimentarius CXC 1-1969 (Rev. 2023): the seven HACCP principles and twelve steps, with GMP and GHP prerequisites. The hazard analysis reflects how the sector actually behaves. Because low water activity, below 0.60, keeps the finished product inherently stable, the single critical control point is CCP-1 metal detection at grinding, and the remaining risk sits with operational prerequisite programmes.

Those programmes are documented in turn: intake screening for ochratoxin A, pesticides and moisture; de-stoning; roasting, covering ochratoxin A reduction alongside acrylamide and PAH control; sealing; and labelling. The manual layer sets out the methodology behind them — hazard analysis, prerequisite programmes, CCP determination, verification and validation, and traceability, withdrawal and recall — while the Coffee and Tea HACCP Plan and Study ties it to the process. Forms include CCP-1 metal detection monitoring, roasting and thermal process records, hazard analysis and CCP determination worksheets, and a mock recall record, each with a document code, revision history and approval fields.
