Overview
Knowing the HACCP principles is not the same as writing a plan that works. This course closes that gap by practice. Delegates work in groups on a fictional case, 'Example Kitchen', which produces a chilled chicken curry, and build its draft HACCP plan through a series of workshops mapped to the Codex twelve steps.
Each module ends in a workshop and a worksheet. The worksheets run from the HACCP team charter to a go-live checklist, and they double as templates for the buyer's own plan. The case works to Dubai Municipality Food Code figures, such as chilled storage at 5 °C or below, a core cooking temperature of 75 °C and two-stage cooling, and delegates are told to use the figures their own authority sets.
Assessment combines a written exam with answer key and practical notes, and a scored plan assessment weighted towards reasoning over conclusions. A certificate template records training given by your organisation. AGS is independent and is not affiliated with Dubai Municipality. Standards are referenced by number and title only, and no standard text is included.

- The case: the Example Kitchen case study, used in every workshop.
- Preliminary steps: the HACCP team and charter, product description, intended use and a confirmed process flow diagram.
- Hazard analysis: identifying and assessing hazards at each process step.
- Critical control points: deciding where control is critical and setting critical limits.
- Monitoring and corrective action: who checks what, how often, and what happens when a limit is missed.
- Verification, records and go-live: verification, documentation and a go-live checklist.
- Assessment: a written exam, practical notes and the plan assessment.
