Overview
This HACCP-based food safety management system is written for international restaurant chains and franchisors trading across several countries and regulatory regimes. It follows the Codex Alimentarius seven principles and twelve steps, so the hazard analysis sits in the framework national regulators and auditors already recognise. A Restaurant Brand Food Safety Manual carries group policy; a Restaurant HACCP Plan and Study records the analysis every unit works to. Both are editable, so the group standard is issued centrally and adapted where local law demands.
Three controls carry most of the cross-border load. Allergen management lets a menu-item specification be restated under whichever national declaration rules apply, while the cross-contact control underneath stays identical in every kitchen. Supplier approval is centralised, so a unit buying in its own market still buys to group specification. Traceability identifies a batch precisely enough to withdraw in one territory while the rest of the estate trades on, and identical forms in every unit are what make a group audit programme workable.
What this system covers
- Hazard analysis and CCP determination: critical limits, monitoring, corrective action and verification through the Codex twelve steps
- Temperature control at cook, hold, chill and reheat, set once for the group menu
- Allergen declaration across territories, with cross-contact control unchanged
- Group sourcing and local purchasing: raw material specification and an approved supplier list
- Traceability, withdrawal and recall scoped to one market at a time
- New-unit mobilisation and franchise oversight, with brand-compliance verification before a unit trades
- Off-premise and delivery service: order control and temperature integrity once food leaves the kitchen
Who it's for
Group quality directors, franchisors and multi-country operations leads are the buyers, and the moment is usually a territory decision: a new market to enter, or a franchise agreement that must state what the operator will be held to before signature. What they get is an editable framework a regulator in any market will recognise, and one a company-operated unit and an operator they do not employ can both be measured against.
