Overview
Traditional and heritage kitchens serve hand-prepared cuisine made by methods that resist industrial standardisation, and conventional food-safety paperwork rarely fits them. Procedures and forms turn time-honoured practice into steps that are controlled, monitored and documented to modern expectations; checklists for kitchen set-up, pre-service opening and traditional cooking verification make that a daily routine; and training evidences hygiene competence while respecting the craft.
