Overview

Prerequisite programmes, hazard analysis, CCP identification, critical limits, monitoring, corrective action, verification and record-keeping are all present, but the controls are adapted to traditional processes: slow cooking, fermentation and curing, open-flame and clay-oven methods, hand preparation and heritage recipes. Procedures and forms turn time-honoured practice into steps that are controlled, monitored and documented to modern expectations; checklists for kitchen set-up, pre-service opening and traditional cooking verification make that a daily routine; and training evidences hygiene competence while respecting the craft.
