Overview

A soft drink is water that has been treated, sweetened and sealed, so the plant's food safety case rests largely on that water and on closure integrity. This guideline is the international edition of source regulation PHC-C-5, built on the Codex General Principles of Food Hygiene (CXC 1-1969) with its HACCP annex, the Codex code for bottled and packaged drinking waters (CXC 48-2001) and the WHO Guidelines for Drinking-water Quality.

Carbonated and non-carbonated production are both covered, with premises, utilities and equipment ahead of the line and laboratory monitoring, calibration, shelf-life validation, traceability, recall and internal audit standing behind it.
