FSS-01 is the reference standard of the AGS Food Safety Management Framework, issued in the AGS Food Safety Series and supplied as one editable document, not a management system. It states what an establishment must have in place and be able to demonstrate, and states it concretely: cooking is set against tabulated minimum core parameters, and holding and display treat time as a control alongside temperature.
