Overview
A technical course on food-borne disease for professionals who need more than handler-level awareness: food inspectors, quality and food-safety officers, public-health staff, laboratory personnel and HACCP team members. The curriculum works through the major bacterial, viral and parasitic agents of food-borne illness — among them Salmonella, Listeria, E. coli, Campylobacter, norovirus and toxin-producing organisms — covering their reservoirs, their routes of transmission and the conditions under which they grow.
From the agents the course moves to how illness appears in populations: the epidemiology of outbreaks and how an outbreak is investigated, the foods that repeatedly carry high risk, and the groups for whom infection is most dangerous. It closes on the preventive controls that break contamination chains in production, retail and food service. Trainers run sessions from prepared plans and answer keys; the learner workbook carries case studies and exercises, outbreak scenarios among them; a presentation deck supports the taught material; assessment tools record what was learned; and registration, attendance and certification material handles the cohort. The material is editable, so a department or consultancy can brand it and set it alongside an existing food-safety programme, giving inspection and HACCP judgement a disease-based foundation.
What this system covers
- Bacterial agents — Salmonella, Listeria, E. coli and Campylobacter, with their reservoirs and growth conditions
- Viral and parasitic agents of food-borne illness, norovirus included
- Toxin-producing organisms and the illnesses they cause
- Transmission routes — how an agent moves from its reservoir into food and on to the consumer
- Epidemiology of outbreaks and outbreak investigation
- High-risk foods and vulnerable populations
- Preventive controls that break contamination chains in production, retail and food service
- Outbreak case studies and scenario exercises that sharpen inspection and HACCP judgement
Who it's for
Regulatory inspectors, public-health and environmental-health teams, laboratory staff, and quality and food-safety officers in manufacturing, retail and food service, along with HACCP teams whose hazard analysis needs to rest on more than a template. The trigger is often an outbreak or complaint that exposed a gap in technical understanding, a certification body expecting demonstrable competence, or a HACCP review in which the biological hazards were never properly argued. Participants finish able to name the agent, explain how it reaches food, and defend the control that stops it.
