Overview
ISO 22000:2018 is an international standard that specifies the requirements for a food safety management system, enabling any organisation directly or indirectly involved in the food chain to demonstrate its ability to control food safety hazards and consistently provide safe products and services. Its scope is deliberately broad, applying to producers, manufacturers, caterers, retailers, transport and storage operators, and providers of equipment, packaging, cleaning agents, ingredients and other services, regardless of size or complexity. The Standard follows the ISO High-Level Structure common to modern management-system standards, which facilitates integration with ISO 9001 and others, and is built around the Plan-Do-Check-Act cycle operating at two levels: the overall management system and the operational HACCP processes. It combines four key elements: interactive communication along the food chain, systematic management-system principles, prerequisite programmes, and HACCP principles based on Codex Alimentarius. Requirements address the context of the organisation, leadership, planning including risk and opportunity assessment, support and resources, operation covering prerequisite programmes and the hazard control plan with critical control points and operational prerequisite programmes, performance evaluation, and continual improvement. ISO 22000 itself is a certifiable standard but is not directly recognised by GFSI; the FSSC 22000 scheme incorporates it, together with technical prerequisite specifications and additional requirements, to achieve GFSI recognition. Certification is carried out by certification bodies through a two-stage initial audit followed by surveillance and recertification over a three-year cycle.
