Overview

ISO 22000:2018 specifies the requirements for a food safety management system, letting any organisation in the food chain, directly or indirectly, demonstrate control of food safety hazards. Its scope is deliberately broad: producers, manufacturers, caterers, retailers, transport and storage operators, and suppliers of equipment, packaging, cleaning agents, ingredients and services, at any size.

Plan-Do-Check-Act runs twice over — once around the management system, and again inside the operational HACCP processes — which is what separates ISO 22000 from a hazard study kept in a folder of its own. Four elements combine: interactive communication along the chain, management-system principles, prerequisite programmes, and HACCP principles based on Codex Alimentarius. Hazard control then divides between critical control points and operational prerequisite programmes within one plan, each with its limits, monitoring and correction. Because the Standard uses the ISO High-Level Structure, context, leadership, planning with risk and opportunity, support, operation, performance evaluation and improvement align with ISO 9001 in one integrated system. ISO 22000 is certifiable in its own right but is not directly recognised by GFSI; FSSC 22000 incorporates it, with technical prerequisite specifications and additional requirements, to achieve that recognition. Certification runs as a two-stage initial audit with surveillance and recertification over a three-year cycle.
