Overview
IFS Wholesale/Cash and Carry version 3 is an integrated management system standard for product safety and quality in businesses whose primary activity is selling goods to other businesses and professional customers. It covers wholesale and cash-and-carry operations that store, handle and trade food and, where relevant, non-food products, and it uniquely combines product-handling requirements with those for trading and brokered goods. The documentation holds that dual structure throughout.
The Standard is organised around governance and management commitment, an HACCP-based product safety and risk management system, resource management, operational processes for purchasing, storage, transport, handling and additional services, and measurement, analysis and improvement through internal audit, corrective action and management review. Traceability, food defence, fraud mitigation, product integrity and control of outsourced and traded products run across all of it. Approved certification bodies audit against the IFS scoring approach, where knock-out criteria and major non-conformities shape the result, and certificates run for a defined validity with renewal auditing. IFS schemes are recognised within the GFSI framework where benchmarked.
