Overview

Halal slaughter of cattle and other large ruminants, documented for the Halal Assurance System framework associated with Malaysia's Department of Islamic Development (JAKIM) and standards such as MS 1500. The system runs the whole operation: reception, corralling, driving and washing, ante-mortem inspection, restraint and non-penetrating stunning, Islamic slaughter (dhabh), bleeding and Halal checking, skinning and dressing, post-mortem inspection, chilling, cutting, packaging and expedition. Daily floor control follows the Malaysian Protocol 2011 for cattle slaughter.

The Shariah controls are written down rather than assumed: a competent, trained Muslim slaughterman using a sharp implement with the prescribed invocation; stunning that must stay non-lethal and verifiably reversible, with stunner verification and the Halal head check recorded; complete bleeding confirmed before dressing continues; carrion and improperly slaughtered animals excluded. Identification and Halal marking travel with each carcass, and chillers, deboning and dispatch stay segregated from non-Halal production. Sertu answers contact with severe najs, and an internal Halal committee keeps audit, training and corrective action running between JAKIM assessments.
