Overview
Halal slaughter of cattle and other large ruminants, documented for the Halal Assurance System framework associated with Malaysia's Department of Islamic Development (JAKIM) and standards such as MS 1500. The system runs the whole operation: reception, corralling, driving and washing, ante-mortem inspection, restraint and non-penetrating stunning, Islamic slaughter (dhabh), bleeding and Halal checking, skinning and dressing, post-mortem inspection, chilling, cutting, packaging and expedition. Daily floor control follows the Malaysian Protocol 2011 for cattle slaughter.
The Shariah controls are written down rather than assumed: a competent, trained Muslim slaughterman using a sharp implement with the prescribed invocation; stunning that must stay non-lethal and verifiably reversible, with stunner verification and the Halal head check recorded; complete bleeding confirmed before dressing continues; carrion and improperly slaughtered animals excluded. Identification and Halal marking travel with each carcass, and chillers, deboning and dispatch stay segregated from non-Halal production. Sertu answers contact with severe najs, and an internal Halal committee keeps audit, training and corrective action running between JAKIM assessments.
What this system covers
- Cattle reception and ante-mortem — corrals, driving and washing, rest and feed declarations, fitness before slaughter
- Restraint and non-penetrating stunning — parameters that keep the stun reversible, with verification and head checks recorded
- Islamic slaughter (dhabh) and bleeding — slaughterman competence, implement condition, invocation, and complete bleed-out confirmed before dressing
- Dressing and post-mortem control — carcass identification and Halal marking carried through the line
- Chilling, cutting, packaging and expedition — physical separation from non-Halal product, with cold chain monitoring
- Sanitation and ritual cleansing (sertu) — daily pre-operational hygiene and GMP control
- Competence and audit readiness — slaughterman roster and certification status, MS 1500:2019 internal audit, JAKIM readiness
Who it's for
Abattoir managers, Halal executives and quality leads at cattle and large-ruminant slaughterhouses working to Malaysian requirements or supplying buyers who recognise JAKIM certification. It is bought ahead of a certification or surveillance audit, or when a customer asks to see the slaughter controls in writing. Afterwards the plant has its dhabh, stunning and segregation practice documented, with daily records an auditor can follow back to a named slaughterman and shift.
