Overview

New food handlers need a small set of rules they can remember on their first shift: wash hands at the right moments, report illness, keep raw and ready-to-eat food apart, and keep food out of the danger zone. This course teaches them in plain language, close to the workplace.

The speaker notes turn each slide into a conversation on the floor. A one-page handout holds every value taught, with a do and avoid checklist. The assessment uses multiple-choice and true or false questions with a 60% pass mark.

The temperature figures follow the Dubai Municipality Food Code, and the notes tell the trainer to say which figure governs where a local code differs. The Codex general principles of food hygiene are also named. The course follows a Level 1 syllabus structure. It is not an accredited qualification or award, and the certificate records training given by your organisation. AGS is independent and is not affiliated with Dubai Municipality. Standards are referenced by number and title only, and no standard text is included. Regulations are referenced by citation.

What this course covers

  • Hygiene: handwashing triggers, illness reporting and keeping raw and ready-to-eat food apart.
  • Temperature control: the danger zone of 5 °C to 60 °C, cold holding at 5 °C or below, hot holding at 60 °C or above, cooking to a core temperature of at least 75 °C, and reheating to above 75 °C.
  • Cooling and time limits: two-stage cooling from 60 °C to 20 °C within 2 hours, then to 5 °C within the next 4 hours, and discarding hot food after 2 hours and cold food after 4 hours out of temperature control.
  • Storage: thawing, date marking and first in, first out.
  • Practice and assessment: a closing floor walk, a written assessment with a trainer-only answer key, and a certificate template.

Who it's for

Everyone who touches food, as a quick induction. A supervisor or in-house trainer delivers it in or near the workplace.

For a fuller handler course with a trainer guide and admin pack, see the Food Handler Training Package. The Food Safety Level 1 Training Package is a longer entry-level course in the same range.
