Overview

A laboratory result is only as good as the sample behind it. A sample that is not representative, is contaminated during collection, loses its chain of custody or warms in transit can undo an enforcement case. This course takes inspectors through each step, from planning a representative sample to handover at the laboratory.

Delegates complete a supervised practical sampling assessment marked out of 100 and a written exam, and must pass both. The delegate workbook holds a blank sample withdrawal record that your authority can reuse, and the practical assessment criteria. A slide deck with notes, the trainer's exam pack with answer key and practical notes, and a certificate template that records training given by your organisation complete the package.

Sampling plans for prepackaged food refer to GSO 1000 (2024 edition), and the sample-size slide is left for the trainer to complete from the organisation's own copy of the standard. General principles follow Codex CXG 50, with other GSO sampling standards for bulk commodities such as cereals. Standards are referenced by number and title only, and no standard text is included. AGS is independent and is not affiliated with any food control authority, standards body or the Codex Alimentarius Commission.

What this course covers

  • Why sampling matters: what a poor sample costs an investigation.
  • Rules, roles and records: the sample controller, the sealed duplicate and the sample form.
  • Sampling plans and statistics: representative sampling, with worked calculations.
  • Methods by situation: choosing the right method for the product and setting.
  • Aseptic technique: sterilisation and contamination control during collection.
  • Identification and chain of custody: labelling, sealing and the custody sequence.
  • Cold chain and dry ice: keeping samples at the right temperature in transit.
  • Laboratory receipt: handover checks and commodity notes.

Who it's for

Food inspectors, sampling officers and laboratory liaison staff in food control authorities, with Gulf sampling practice as the frame.

The Food Import & Export Inspection Training Package covers sampling as one topic among many. This course is the sampling specialism. New inspectors can take the Food Inspector Foundation Training Package first.
