Overview

Many storage problems can be found with a tape measure and a careful look: a stack too close to the wall, a pile too high, a damaged sack left in place, a delivery accepted from a dirty vehicle. This course teaches warehouse and goods-in staff to check those things against set figures.

The handout puts the measurable criteria in one reference table. Clearances from walls, spacing between stacks and maximum stack size are given as good-practice figures, with the Dubai Food Code figures for wall and floor clearances and frozen receiving temperature given alongside. The stacking rules suit bulk dry goods and strategic reserve stores. For day-to-day store management, the course points to your site's own warehouse procedures, which are not included.

The slides carry speaker notes for delivery on the floor. A written assessment with a separate answer key and a certificate template that records training given by your organisation complete the pack. The course also names the Codex general principles of food hygiene. AGS is independent and is not affiliated with Dubai Municipality. Standards are referenced by number and title only, and no standard text is included.

What this course covers

  • Receiving: vehicle and pallet inspection before goods come in.
  • Stacking and spacing: clearances from walls, between stacks and around rodent control devices, and maximum stack size.
  • The site: a vegetation-free zone and paving around the store.
  • Rotation: first in, first out and first expired, first out.
  • Temperature: frozen food received at no warmer than −10 °C, as the Dubai Food Code sets.
  • Pests, damage and chemicals: pest checks, handling damaged goods and keeping chemicals in separate premises.
  • Assessment: a written assessment with a separate answer key and a certificate template.

Who it's for

Warehouse and goods-in staff, trained on the floor by a store supervisor or in-house trainer.

For the documented system, it pairs with the HACCP Storage & Distribution Management System. The International Technical Guidelines Pack - Food Storage & Store Management covers stack-based store management for strategic food reserves as guidance.
