Overview

Reception and lairage, ante-mortem inspection, restraint, Islamic slaughter (dhabh), bleeding, dressing, post-mortem inspection, chilling and dispatch: this kit documents the whole cattle and large-ruminant operation as a sector-specific Halal Assurance System. The scheme is the HAS framework of the GCC Standardization Organization (GSO), the standardization body of the Gulf Cooperation Council states, which calls for documented internal discipline able to hold Halal integrity in place between inspections rather than at the moment of one, applied alongside the GSO 2055 series of product and certification standards.

Slaughter is carried out by a competent, trained Muslim slaughterman using a sharp implement with the prescribed invocation. Where stunning is permitted it must be non-lethal and verifiably reversible, so it is treated as a controlled parameter under GSO 993, backed by restraint and stunning records and dedicated cattle guidance. Complete bleeding is confirmed before dressing proceeds, and carrion or improperly slaughtered animals are excluded. After dressing the risk becomes one of identity: carcass identification, Halal marking and physical segregation through chillers, deboning and dispatch keep Halal and non-Halal production apart. An internal Halal committee holds the procedures, approves farms, feed and input materials, audits, trains the line and manages corrective actions.
