This guideline specifies each in turn — construction, equipment, refrigeration safety and ultraviolet lamp placement — working from the storage and transport provisions of Codex CXC 1-1969, CXC 47-2001 and related texts, and from ISO 22000.
What follows is clock-and-thermometer discipline, written as rules a shift can apply rather than principles to interpret: how stock is rotated, how it is kept apart, how the cold chain is verified in and out, and how vehicles are judged before they are loaded.
