Overview
A master guideline for mortadella plants, 54 chapters with six annexes, aligned with the Codex meat hygiene codes, CXS 98-1981 and CXS 89-1981, and with ISO 22000. It fixes mortadella types, their compositional specification and hazard profile, and the establishment laid out for one-way flow.
The process chapters follow the product exactly, from tempering and mincing through emulsification, diced meat preparation, air-free stuffing, cooking and shower cooling. Weight then falls on the high-risk second half, where a cooked product is handled again: sliced, packed, labelled and given a shelf life it has to survive.
What it covers
- Mortadella types, compositional specification and hazard profile
- Meat raw materials, species authenticity, milk protein, glucose, fillers and binders
- Additives and emulsifying salts, inclusions, garnishes and casings
- Emulsification, air-free stuffing, cooking, shower cooling and chilling
- Slicing, high-care handling, Listeria control in ready-to-eat areas, and shelf-life validation
Who it's for
Producers of mortadella and other cooked-emulsion meats, plant managers, QA and hygiene teams, and inspectors of ready-to-eat facilities. The trigger is usually a Listeria finding, a ready-to-eat customer specification, or an audit reaching past the cook into the slicing hall; annexes add compositional tables and post-cook cleaning rules.
