Overview

Written for cattle and other large ruminants, this system documents Halal control across the whole slaughter operation: animal reception and ante-mortem inspection, the slaughter act, bleeding, dressing, post-mortem inspection, chilling and dispatch. It follows the United Arab Emirates national Halal scheme, whose UAE.S standards adopt the GSO 2055 framework under the Emirati standardisation and conformity authorities, aligning UAE requirements with the wider Gulf system while national regulatory oversight remains.

Slaughter is performed by a competent, trained Muslim slaughterman using a sharp implement with the prescribed invocation; where stunning is permitted, its parameters are verified so that it stays non-lethal and reversible. Complete bleeding is confirmed, carrion and improperly slaughtered animals are excluded, and rejected carcasses are isolated and disposed of under record. Identification and marking must then survive dressing, chilling and the deboning hall, because a large ruminant is broken down long before dispatch. Sector compliance follows UAE.S 993:2022, with an internal Halal committee holding the system together between external assessments.
